What does your company do?

We are primarily a meal prep service offering six meals per week that are gluten-free, free of added preservatives or processed foods. We change our menu every week and offer something for everyone, including vegan and vegetarian meals. We prepare smoothie bowls and smoothies every day and we juice twice a week – more depending on orders. We are getting ready to announce a new nighttime ala carte menu.

What is your background and how did you get into the business?

I have a master’s degree in business administration and started my career in public accounting and then corporate accounting. After moving to Florida in 1998, I started teaching and taught business classes for 17 years at Flagler/Palm Coast High School. When my son and business partner was diagnosed with Crohn’s disease and after extensive research, we discovered that changing his diet was pivotal in staying in remission and off prescription medication. I began cooking at home over the weekend, prepping meals for the week to avoid any preservatives or processed foods. This is what lead to the idea of opening Clean Eats Kitchen LLC, which we just rebranding to Redefined Food Co.

What sets your company apart from others?

We change our menu every week and we put a ton of effort into making our food better-than-restaurant quality.

What is the biggest challenge you company faces?

Our biggest challenge is finding the proper work/life balance since we are basically only a mother and son team. We have a few high school students, but they only work weekends. We have been looking for the right person to help out with cooking and running day-to-day operations.

What do you enjoy most about your job?

Talking to our customers every week. Most of them have been with us since the beginning and they are like family to us.

What advice do you have for aspiring entrepreneurs?

You truly need to love what you are doing because you work lots of hours.
